What the tamper is for
Tamping compresses previously distributed grounds in the basket into a level puck. The order matters: distribute evenly first, then press straight down. A large mound on one side can be pressed flat, but that does not guarantee even density throughout the bed. Tamping completes good preparation rather than replacing it.
The right size
A tamper must fit the basket. A diameter that is much too small leaves a wide rim untouched. One that is too large may jam. Follow the actual specifications of the basket and tool, not just your machine’s nominal group diameter.
Rest the portafilter stably on a suitable surface. Keep your wrist and arm as relaxed as possible and avoid applying force in a twisted position. If tamping regularly causes pain, more pressure is not the solution.
One clear movement
- First distribute the appropriate coffee dose evenly in the dry basket.
- Place the tamper level and check its alignment.
- Press with control until you have an evenly compacted bed.
- Lift the tamper off steadily without pulling sideways at the puck.
- Remove loose grounds from the rim and carefully lock it in.
No magical number of kilos
Online, a precise force is often presented as the key to espresso. For everyday use, consistent, level preparation matters more than chasing one number. La Marzocco describes tamping as a relatively small adjustment and emphasises a level, compacted puck.
If your shot runs too quickly, tamping much harder is no reliable substitute for a suitable grinder setting. Check dose, distribution and grind. The tool should finish the preparation, not solve every recipe problem.
Why tapping afterwards can interfere
Hard knocks after tamping can alter the prepared bed. If you want to remove grounds from the rim, do so carefully without unnecessarily disturbing the puck. A short, clean routine is easier to reproduce than repeated tamping, tapping and polishing.
A useful practice focus
Prepare several shots with the same dose and focus only on alignment. Check whether the tamper base is parallel to the basket rim. Then assess flavour and variation in time. A more consistent routine is tangible progress, even if your maximum pressure has not increased.
Spring-loaded and self-levelling tampers
Such tools can help with a consistent movement. They are not an automatic promise of quality, however. Check the fit, cleaning and whether they actually simplify your routine. A simple, well-fitting tamper can be a good solution too.
What matters afterwards
Handle the finished puck gently and begin extraction promptly. If you prepare it the same way every time, the effects of grind and beverage quantity become much clearer. That is precisely the value of a good tamping routine.
